Strawberry, Peach, and Coconut Lime Pops
Whoa.
That title was a mouthful :)
Nice thing, though, is that the title includes all the ingredients.
Strawberries. Peaches. Coconut (milk). And lime.
That's it!
There are lots of ways to make popsicles and most of them are pretty simple.
I was really pleased with how easy it was to make these and how deliciously pure they are to eat :) I love recipes that are simple, adaptable , and refreshing!
Can you tell?
Ingredients:
Makes about 6 dixie-cup-sized pops
2 cups sliced strawberries
2 cups sliced peaches
1/2 cup coconut milk (or more if you'd like more coconut flavor)
Zest and juice of 1 lime
Directions:
Slice strawberries and peaches. Zest some lime over the fruit and squeeze the lime juice over it. Blend together fruit until it's smooth and creamy. Add coconut milk.
Pour into dixie cups or popsicle mold. If using dixie cups, put them in the freezer for about 15 minutes before jabbing them with popsicle sticks!
Enjoy :)
