Cilantro, Swimsuits, and Garlic, Oh My!
Because it's this time of year:

And I want to eat this (and also wear a swimsuit!):
I made this (forgive the horrible quality of the photo!):
I made up the recipe (which is far from French cuisine!), and I called it "Sizzling and Slimming Summer Salsa!" I'm usually a "by the recipe" kind of cook, but it was fun to branch out and experiment with making my own recipe. We used it on top off a piece of grilled chicken and pasta. Sprinkling a little mozzarella over it all made it just right! Not only was it yummy, but it was healthy too!
Sizzling and Slimming Summer Salsa:
Ingredients for veggie mixture:
1 cup of sliced mushrooms
1/4 cup of cilantro
2 cups of diced tomatoes
2 cloves of garlic
1/4 cup of onion
2 ears of corn (slice the fresh corn off the cob!) or 1 can of corn
Ingredients for Sauce:
1 tbsp of olive oil
1 tbsp of Worcestershire sauce
1 tsp of vinegar
1 tsp of white cooking wine (optional)
A pinch of cayenne pepper
Directions:
Put all the sliced and diced veggies into a bowl. Whisk together sauce ingredients and pour onto veggie mixture. Coat the veggies with the sauce, add them to a pan (medium to high heat), and sizzle (cook) them for about 5 minutes (just enough time to warm, but not cook too thoroughly).
Ideas for Sizzling and Slimming Summer Salsa:
--Add some black beans and stuff it into a warm tortilla
--Serve over rice or pasta
--Put some into a pita pocket and eat it up!
--Add some peppers and squash for an even more filling veggie mixture
--Serve over juicy steaks or grilled chicken!
Enjoy!
